I trained as a pastry cook and worked two years in a bakery near the Capucins market, getting up at four to make canelés. I still make them at home every Sunday, and I have strong opinions about the crust. When I got tired of the hours I took the guide course at the tourist office, because I had always liked explaining the city to friends who came to visit. Bordeaux changed a lot while I was growing up. When I was a child the stone was black with soot and the quays were car parks, and now people come from everywhere to walk along the river. I like to show both, the grand eighteenth-century streets and the neighbourhoods like Saint-Michel where the market, the flea market and the North African grocers are still the heart of things.
