I have worked behind a few different bars on Rúa do Franco over the years before moving into guiding, so I know which pulperías have been open the longest and which ones opened last year. On camera I walk the old town's tapas streets after dark, explaining the etiquette of ordering a ración and pointing out which bars still cook octopus the traditional way. I keep the tone relaxed and let the noise of the street come through rather than talking over it constantly. Guiding by video at night means people can see exactly how the old town sounds once the shops close.
