I am a Leither, which is a different thing from being from Edinburgh, whatever the maps say. Leith was its own town until 1920, and a lot of us still act like it. I trained as a chef, worked in kitchens on the Shore for nine years, then spent three years at a whisky bonded warehouse in Leith learning how casks work. Now I show people what to eat and drink in the port, and in the evenings I take them round the dark side of the Old Town: body snatchers, witch trials, the Covenanters locked in the Greyfriars yard. I speak English and Spanish, which I picked up working a season in Barcelona. I keep it moving, I do not do fake ghosts jumping out of doorways, and I will tell you which whisky to buy for your dad. Everything I do is now live on video: I walk Edinburgh with my phone, and you can ask me anything as we go.
