I trained as a cook before I started guiding, and food is still how I read this city on camera. I plan my route around the covered market in the morning, when the stalls are fullest and the light through the roof is best for the phone. I ask the same three stallholders questions every week, so viewers get a real answer instead of a rehearsed one. Braga eats differently to Lisbon or Porto, heavier on pork and cornbread, and I explain why as we go rather than saving it for the end. I keep the pace slow enough that you can actually see what is on the counter.
