I worked behind a cheese counter in Borough Market for three years before I started guiding, and I still know most of the traders by name rather than by their stall number. My sessions run early, before the lunchtime crowds arrive, so the camera can actually show the produce being arranged rather than a wall of shoulders. I moved here from Bucharest almost a decade ago, and I like comparing what is sold here with what I grew up eating, which visitors often find more interesting than a straight list of stalls. I answer questions about specific ingredients in as much detail as anyone wants.
