I have run a small food stall near Plac Nowy for years, so my sessions usually centre on zapiekanka, the open-faced baguette that has become one of Krakow's defining street foods. I explain how the dish developed during communist times and show a few of the toppings that go beyond the basic mushroom and cheese version most visitors know. I also cover the round market hall on the square itself, since it has become the centre of the city's late-night food scene. Video works surprisingly well for this, since I can hold the camera close on the food as it is made.
