I have worked bar shifts in Casco Viejo on and off since I was a student, so I know which pintxo bars have been serving the same recipe for decades and which ones changed hands last year. On camera I walk the old town after dark, explaining the etiquette of a pintxo crawl and pointing out a few bars that still do things the traditional way rather than for visitors.
