I studied Basque history at university and now spend most of my guiding time at San Telmo Museoa, housed in a sixteenth century convent that I think gets overlooked next to the old town's livelier streets. On camera I connect the museum's collection to the building's original religious purpose, then run a second session on the handful of buildings that actually survived Parte Vieja's 1813 fire. I like being precise about what is genuinely old and what was rebuilt afterwards, since I think most visitors assume the whole old town predates that fire. Video guiding lets me be exact about detail in a way a group walk rarely allows.
