My father sold fish at Mercado Central for thirty years, so I can name most of what is on a stall before the vendor tells me. On camera I move slowly along the counters, holding on whatever is freshest that morning, and explain how a mixed fry actually gets built from several different small fish. In the evening I switch to Plaza de las Flores, where the flower stalls and the tapas bars sit side by side. I keep my commentary practical, describing textures and methods rather than promising any particular taste.
