I have worked in a few bars in El Tubo, the maze of lanes behind Plaza del Pilar, since I was a student, so I know which tapas bars have kept their recipes unchanged and which ones came and went. On camera I walk the lanes after dark for the bars themselves, and I also run a planning call for anyone who wants a route worked out before their evening starts. I keep the tone relaxed and let the noise of a full bar come through the microphone rather than talking over it. Video guiding at night here means people can see exactly how the lanes fill up after dinner.
