I worked for years selling oysters and seafood around Galway Bay before moving into guiding, so the bay's food traditions are what I know best, whether I am walking a market stall or talking it through on a call. I like explaining the seasons behind what is landed and sold, and the history of the oyster trade the bay is known for. Five years of guiding has taught me to keep a call conversational rather than scripted, following whatever someone actually wants to know. I always send a short note afterwards with more to read for anyone who wants to go further.
