My family has made khinkali the same way for three generations, and I show that dough being pleated on camera before I show anything else about the city. I work from a home kitchen for part of the call, then move outside to a market or a wine cellar depending on what the group wants to see. I explain what qvevri wine actually is rather than just naming it, since most people watching have never seen a clay vessel buried in a cellar floor. I keep the pace unhurried and let people ask about ingredients as we go.
