My grandmother had a stall at Atarazanas for decades, so the market's stained-glass window has been part of my life since before I understood what it depicted. On camera I move through slowly, holding on the coloured light before reaching the fish and produce stalls below it. In the evenings I sometimes head out to El Palo instead, where boats are converted into open grills for espeto, and I explain the method without promising anyone a taste through the screen. I keep my descriptions specific, naming ingredients rather than simply saying something is good.
