I trained as a chef before guiding and still think Gothenburg's two covered markets say more about the city's food than any restaurant could. My main session walks Feskekôrka, the nineteenth-century fish market built to look like a Gothic church, explaining the joke behind its own name. A second session covers Saluhallen Briggen, a general food hall a short walk away, stall by stall. I try to describe what is actually for sale rather than simply naming dishes, since a market only makes sense once you understand what each stall is actually selling that particular morning.
