My family has sold fish at the Fischmarkt for three generations, so a Sunday morning there still feels like watching relatives at work. On camera I move along the harbour hall early, before the auctioneers start shouting their prices, and explain how a market built for dockworkers turned into a weekend institution nobody quite plans to end. I also point out where the classic fish sandwich recipes came from and how each stall varies its own version. Filming the market means arriving before the crowd does, since the hall gets loud fast once the auctioneers begin their routine properly.
