Toni Grubišić

Before guiding I spent close to a decade working in a small family restaurant in the old town, so most of what I know about Istrian food and wine came from behind a counter rather than a course. These days I run planning calls rather than filmed walks, talking people through where the truffles, the wine and the coast fit together over a few days here. I keep a map open on screen and answer honestly, including when a plan is trying to fit in too much. Nine years of watching visitors get this wrong and right has made me fairly direct about it.
