I have tended bar in Parte Vieja on and off for over a decade, so I know which pintxo counters have barely changed their recipes and which streets actually survived the fire that rebuilt most of the old town in 1813. On camera I walk the grid after dark for the bars themselves, and separately I run a planning call for anyone who wants the history sorted out before they arrive. I keep things practical rather than romantic about the old town, since I think visitors get more out of knowing what is genuinely old. Guiding by video at night suits this street better than daylight ever could.
