About this tour

This session is a hands-on pasta class from a Bologna kitchen, covering both tagliatelle and tortellini in one sitting. The camera stays close on the rolling of the sfoglia, the cutting of tagliatelle to its official width, and the folding of tortellini around its classic filling. It closes at a table set with both dishes finished in ragù.

After a sound check, the class moves technique by technique in the order above, with the guide slowing down for questions about method rather than rushing to the next step. A written recipe for both dishes goes out once the call ends.

This suits anyone planning to make fresh pasta at home and wanting to see the technique before attempting it. It also suits anyone who simply enjoys watching pasta made properly, without needing to make it themselves.

  • A close look at the dishes and where locals buy them

Itinerary

  1. Welcome and sound check 7 min

The guide joins the video call, checks the picture and sound with you, and gives you a quick sense of Bologna before heading out.

  2. Rolling the sfoglia 21 min

The camera stays close on the hands rolling sfoglia with a long, thin pin, the Bolognese method that produces a sheet of pasta far larger than most home kitchens attempt.

  3. Cutting and folding 21 min

The guide cuts tagliatelle to the official width of eight millimetres, then folds a batch of tortellini around the classic filling, showing both techniques back to back.

  4. The finished table 21 min

The class ends at a table set with tagliatelle and tortellini made during the call, tossed in ragù, and the guide sends the written recipe home with anyone who wants it.

  5. Your questions 14 min

Time to ask anything about Bologna: prices, safety, food, or whatever you are curious about.

  6. A short list to keep 6 min

Before you go, the guide sums up with a few things worth remembering: a dish to try: Tortellini in brodo and Università, worth a slower look.

Good to know

  • A stable wifi or mobile connection makes the picture smoother than a shaky one.
  • Any phone, tablet or laptop with a camera works. You watch, the guide does the walking.
  • Times are shown in Rome time, so check the time where you are before you book.
  • The session is not recorded, and recording it yourself is not allowed. Feel free to take your own notes.
  • Ask questions any time, out loud or in the chat. The guide will pause to answer.
  • Sessions run in small groups, up to 10 people, so there is room for everyone to ask something.

How reviews work

Only travellers who booked and paid through Locals Guide and whose tour took place can leave a review, within 60 days of the tour. Every review is marked "Verified booking". Guides cannot pay for, edit or hide reviews, and ratings are the plain average of all published reviews.
