Niçoise cooking beyond socca

- Two or three dishes built into a menu
- Ingredients that actually make the difference
- A written method for each dish
About this tour
This call goes beyond socca into the wider cooking of this coast, dishes like pistou soup and stuffed vegetables that rarely get much attention. We talk through what makes each one specific to this region and how to put a few of them together into an actual meal. It is built for someone who already knows the famous dish and wants to go further.
We start with what you already have or can find locally, then work through each dish's method in turn. You can ask about substitutions or timing as we go, and I will adjust the plan around what is available to you. By the end you have a written menu and method to work from.
This suits anyone who has already tried socca and wants to explore further into the region's cooking. It also suits someone planning a dinner around a few of these dishes together.

Itinerary
-
Hello, and what you want to know 5 min
The guide calls you and asks what you are after: planning Nice, recommendations, or just questions.
-
Beyond the one dish 15 min
We go through a couple of dishes visitors rarely hear about, pistou soup and stuffed vegetables among them, and which ingredients actually make them work. I point out where the recipes genuinely differ from versions found elsewhere in France.
-
Building a simple menu 15 min
We talk through how to put two or three of these dishes together into an actual meal, since most guides only ever cover them one at a time. You leave the call with a simple written menu and method for each dish.
-
Your questions 7 min
Ask anything that is still on your mind, there is no fixed script.
-
A written note after the call 3 min
You get a short follow-up message with everything mentioned, so you do not have to remember it all.
Good to know
- A stable phone or internet connection, whichever the guide uses to reach you.
- No app to install. You answer when the guide calls, or join a video call if you would rather.
- Times are shown in Paris time, so check the time where you are before you book.
- The call is not recorded. Keep your own note of anything you want to remember, or wait for the follow-up message.
- Have your questions ready, though there is time to think of more as you go.
Questions about this tour
What will the call cover?
The guide talks you through Nice: where to go, what to eat, and answers to whatever you ask.
What happens if the call drops?
The guide will try you again straight away.
Can I ask the guide questions during the session, or is it a fixed script?
Anything, any time. Sessions leave room for your own questions throughout, not just at the end.

No. This is a conversation: the guide describes the dishes and where to find them, so you can try them yourself whenever suits you.
How it works
- Your guide calls the number you give at booking.

How reviews work
Only travellers who booked and paid through Locals Guide and whose tour took place can leave a review, within 60 days of the tour. Every review is marked "Verified booking". We check reviews before they appear and publish positive and negative ones alike; we remove only reviews that break our rules (insults, personal data, unrelated content). Guides cannot pay for, edit or hide reviews, and ratings are the plain average of all published reviews.
