About this tour
This call is a method session built around socca, the chickpea pancake my grandmother taught me to make before I could properly reach the counter. We talk through the batter, the resting time and the heat a pan needs before the mixture goes in. It is built for someone who wants to cook it properly rather than just watch it made.
We start with what equipment you already have, then work through the method step by step. You can ask about substitutions or timing as we go, and I will adjust the plan around what is available to you. By the end you have a simple written method in the order you will use it.
This suits anyone planning to cook the dish themselves rather than just watch it explained. It also suits someone who has tried it before and wants to work out what went wrong.

Itinerary
-
Hello, and what you want to know 5 min
The guide calls you and asks what you are after: planning Nice, recommendations, or just questions.
-
The batter 15 min
We go through the chickpea batter my grandmother used, why it needs to rest and how thin it should actually be before it hits the pan. I point out the two mistakes most people make at home before they even start cooking.
-
The hot pan 15 min
We talk through the exact moment the batter needs to hit a very hot pan, since socca rewards heat more than almost any other step. You leave the call with a simple method written out in the order you will use it.
-
Your questions 7 min
Ask anything that is still on your mind, there is no fixed script.
-
A written note after the call 3 min
You get a short follow-up message with everything mentioned, so you do not have to remember it all.

How reviews work
Only travellers who booked and paid through Locals Guide and whose tour took place can leave a review, within 60 days of the tour. Every review is marked "Verified booking". We check reviews before they appear and publish positive and negative ones alike; we remove only reviews that break our rules (insults, personal data, unrelated content). Guides cannot pay for, edit or hide reviews, and ratings are the plain average of all published reviews.
