About this tour
This is a food walk through Testaccio, the district built around Rome's old slaughterhouse, tracing dishes that grew out of quinto quarto, the offal cuts workers were once paid in. You see trapizzino filled with coda alla vaccinara at the stall where it began, supplì rolled fresh at a family bakery, and a tasting counter inside the covered market. The walk ends at the Mattatoio itself and the ancient rubbish hill of Monte Testaccio.
After the sound check, the walk moves stop by stop through the neighbourhood, pausing at each stall or counter for your questions. A shortlist of the dishes and where to find them is sent once the call ends.
This suits anyone curious about Roman food history, especially the dishes built from cuts other kitchens throw away.
Included

- A close look at the dishes and where locals buy them
- A short list of places and dishes to try later

How reviews work
Only travellers who booked and paid through Locals Guide and whose tour took place can leave a review, within 60 days of the tour. Every review is marked "Verified booking". Guides cannot pay for, edit or hide reviews, and ratings are the plain average of all published reviews.
