About this tour

This session goes inside a Neapolitan pizzeria kitchen to watch a pizzaiolo work, from mixing the dough to stretching it and sliding it into a wood-fired oven. You see the hand movements that take years to learn and the finished Margherita and pizza fritta come out. The guide explains the rules set by the True Neapolitan Pizza Association along the way.

After a sound check, the guide walks the process step by step in the kitchen, pausing at each stage for your questions, and sends a written recipe afterwards for anyone who wants to try it at home.

This suits anyone who loves pizza and wants to see how it is really made, whether or not they ever try it themselves.

Included

  • Live video session with a local guide
  • A close look at the dishes and where locals buy them
  • A short list of places and dishes to try later

Not included

Itinerary

  1. Welcome and sound check 7 min

The guide joins the video call, checks the picture and sound with you, and gives you a quick sense of Naples before heading out.

  2. The pizzaiolo's kitchen 21 min

The camera follows the pizzaiolo's hands working a ball of dough, folding and resting it the traditional Neapolitan way, while he explains why the dough needs hours, not minutes, to rise.

  3. Stretching the dough 21 min

Without ever touching a rolling pin, the pizzaiolo stretches the dough thin from the centre outward, and the guide points out the raised edge that becomes the cornicione once baked.

  4. The wood-fired oven 21 min

At the mouth of the oven, the camera watches a Margherita cook in under two minutes, and the guide explains the rules the True Neapolitan Pizza Association sets for dough, sauce and heat.

  5. Your questions 14 min

Time to ask anything about Naples: prices, safety, food, or whatever you are curious about.

  6. A short list to keep 6 min

Before you go, the guide sums up with a few things worth remembering: a dish to try: Sfogliatella and Quartieri Spagnoli, worth a slower look.

Good to know

  • A stable wifi or mobile connection makes the picture smoother than a shaky one.
  • Any phone, tablet or laptop with a camera works. You watch, the guide does the walking.
  • Times are shown in Rome time, so check the time where you are before you book.
  • The session is not recorded, and recording it yourself is not allowed. Feel free to take your own notes.
  • Ask questions any time, out loud or in the chat. The guide will pause to answer.
  • Sessions run in small groups, up to 10 people, so there is room for everyone to ask something.

How reviews work

Only travellers who booked and paid through Locals Guide and whose tour took place can leave a review, within 60 days of the tour. Every review is marked "Verified booking". We check reviews before they appear and publish positive and negative ones alike; we remove only reviews that break our rules (insults, personal data, unrelated content). Guides cannot pay for, edit or hide reviews, and ratings are the plain average of all published reviews.
