Amparo Ferrer

For eleven years I ran a small restaurant on Carrer de Cadis in Ruzafa with my husband. We cooked rice every day, argued about it every day, and fed half the neighbourhood. When we sold it in 2012 I thought I would rest. Instead I started walking visitors through the Mercat Central, because I missed talking about food with strangers. I am Valencian, I speak Valencian, Spanish and English, and I have strong opinions about paella that I am happy to share: no chorizo, no peas, and the socarrat is the best part. My tours are long and generous. I know the stallholders at the market by name, and many of them knew my mother. If you come on a weekday morning you will see the market the way we see it, full of grandmothers with shopping trolleys.
