I worked the stalls at the Haagse Markt with my father as a teenager, so I know which vendors have run the same stand for decades and which ones just opened this year. My video sessions there move between the herring cart and the spice stalls while I explain what is actually being sold and why locals queue at one stand over another. In the evenings I switch to the Grote Markt and the streets around it, since the same square that is a quiet market by day turns into something completely different once the terraces fill up after dark.
