Palermo eats in the street and I grew up in the middle of it, above the Ballarò market, where my mother sold spices and dried fruit. I still wake up to the vendors shouting prices in dialect, the abbanniata, and on my walks I translate some of it, the polite parts. We finish with cannoli filled in front of you. I studied anthropology in Bologna, so I like to talk about how the Arabs, Normans and Spanish left their marks in the kitchen as much as in the churches. I spent two years in Marseille, hence the French. The markets are loud and crowded. Keep your bag in front and your appetite ready.
