I worked a fish stall in the Mercado de la Ribera for years before training as a guide, so I still know most of the sellers and which ones will let me film their counters up close. My sessions move along the river-facing market hall, one of Europe's largest covered markets, explaining what pintxos are built from before anyone ever sees them assembled in a bar. I keep my pace slow in the fish hall especially, since half of what is on display has no obvious name in English. Showing a market properly on camera means staying close rather than talking over the noise.
