I am a Florentine who eats lampredotto for breakfast at least twice a week, which my doctor has opinions about. I grew up in Sant'Ambrogio, two streets from the market, and my aunt had a vegetable stall there until 2019. After a degree in food science in Parma and a few years doing quality control for a cheese producer, I came back and started running food walks. What I show you is what Florentines actually eat: lampredotto and tripe from the kiosk, schiacciata from a bakery that opens at seven, pecorino and finocchiona from a stall that has been there since 1956, and a glass of wine from one of the old wine windows in the palace walls. I skip the food hall above San Lorenzo market because you can find it on your own. Portions are real, so do not eat breakfast. Vegetarians are welcome, but lampredotto will be around you.
